Range and margin

How to Build a Profitable Pub Snack Range

Profit comes from the whole range working together: attractive margin, dependable demand, sensible stock depth and clear reasons for customers to add a snack.

01

Give every line a job

Divide the range into roles. Traffic drivers are recognisable products that make the display easy to understand. Premium lines create interest and support a stronger selling price. Lighter and dietary choices prevent missed sales. Sharing formats increase the value of group occasions.

If two products do the same job, keep the one with better demand, margin or brand fit. Use the freed space for a genuinely different choice.

02

Check gross profit before ordering

Work from the case cost and the number of saleable packs. Enter your own selling price into the calculator on a product page to see revenue, gross profit and gross margin. Keep VAT treatment consistent with your internal reporting.

Margin percentage matters, but so does rate of sale. A slightly lower-margin line that turns quickly can contribute more cash than a slow product with a high theoretical margin.

03

Start focused, then earn the expansion

Begin with enough variety to look deliberate without spreading stock too thinly. Reorder winners, replace persistent slow sellers and test one or two new lines at a time.

Use free delivery at £75 as an ordering tool, not a reason to overstock. Combine categories that will sell in the same period and keep a small buffer on the lines customers actively request.

Common questions

What gross margin should a pub target on snacks?

Targets vary by venue and tax treatment. Use the product calculator with your own selling price, then compare margin and expected rate of sale rather than chasing one universal percentage.

Should I buy only the highest-margin snacks?

No. Demand, stock turn and range balance matter alongside percentage margin.
